Here is my Easy Cucumber Pasta recipe I made with fresh scallions from my friend, singer Domenic Marte’s, garden. Yum!
Easy Cucumber Pasta by Mara More
1 Cucumber (spiralized)
1 Plum Tomato
Spiralize cucumber onto plate. Chop tomato and put on top of pasta. Chop scallion and sprinkle on top. Sprinkle on a few raisins. Enjoy! :)

I made this easy yummy Zucchini Pasta in a few minutes. I peeled the zucchini, cut it in half, and spiralized it. Then I chopped up a tomato and some raisins, put them on top, mixed a bit, and enjoyed. Yum! (low fat raw vegan)
Here’s the recipe:
1/4 Cup Raisins
pinch Spices (Optional)
Peel (optional) zucchini, cut in half, and spiralize.
Chop up tomato and add on top of zucchini.
Chop up raisins and sprinkle on top.
(optional) Sprinkle on spice to taste: oregano, basil, garlic, pepper, etc.
Mix a bit.
My date told me that my skin smelled like a rose. I sniffed my wrist and was very surprised that it really did smell like a rose! I do not wear perfume; so, I wondered how could my skin smell like a rose? Since the saying goes, “You are what you eat.”; I wondered if it was because I ate yummy wild roses during the summer as in my photo of my Wild Dandelion & Wild Rose Salad with orange and avocado. It was very satisfying because edible wild plant foods are nutrient dense. To identify edible wild plant foods, I use the book, Edible Wild Plants: A North American Field Guide to Over 200 Natural Foods, by Thomas Elias and Peter Dykeman. It has beautiful photos and descriptions of over 200 edible wild plants which are free to enjoy! It also tells of any “poisonous look-a-likes” to watch out for.
I went to Juliano’s talk and book signing on Jan 20, 2008 at Organic Garden Cafe, Beverly, MA and had his book, RAW: The UNcook Book, signed by him. His talk was rawesome including his quote, “All you need in life is raw-food and yoga.”, and a funny story of when him told the health inspector that it’s ok for a cat to sleep in the corner of his cafe. A friend from The North Shore Vegetarian Society, where I was the “Speaker-Coordinator” in 1998, had given me a copy of RAW: The UNcook Book one of the first raw vegan recipe books out and it features large beautiful photos of his food.
