Human beings are designed to live on fruits, vegetables, seeds, sprouted grains and legumes. Easy Cucumber Pasta

Here is my Easy Cucumber Pasta recipe I made with fresh scallions from my friend, singer Domenic Marte’s, garden. Yum!

Easy Cucumber Pasta by Mara More
1 Cucumber (spiralized)
1 Plum Tomato
1 Scallion
Raisins (optional)
Spiralize cucumber onto plate. Chop tomato and put on top of pasta. Chop scallion and sprinkle on top. Sprinkle on a few raisins. Enjoy! :)

811 WILD SQ FT SPROUTI’ve been a low-income divorced single-mom vegan since 1990, raw-vegan since 1999, and high high-carb low-fat fruity-raw-vegan since 2010; so here is my response to the question, “How much does it cost to be raw vegan?” I use cronpmeter.com (set to LFRV) to make sure I eat enough calories. Bananas are only $.50/lb (50 cents per pound). There are about 4 bananas per pound. 1 banana is 100 calories so 14 bananas (2 bunches or two 48 oz blender full) have 1,400 calories for $1.75 (14/4=3.5lbs x $.50) multiplied by 7 is $12.25 per week. (Dates cost $4/lb which have 1,279 calories. $28/week.) Walnuts are $5.49/lb(32T) and I eat 2T/day which have 82 calories and costs $.34/day or $2.40/week. A bag of three organic romaine hearts or organic celery or box of organic baby spinach or arugula is about $3 and half pound of organic hemp seeds or organic pumpkin seeds is about $3. I add whatever else I can afford for variety; ie: melon, mango, papaya, tomato, raisins, cucumber, yam, oats, legumes, wild rice, etc. Wild Autumn Berries grow in my yard for free! :) The book, Edible Wild Plants, helps me find free edible wild plant foods. The Sprouting Book helps me grow my own sprouts very affordably. Square Foot Gardening helps me grow some of my own food. The book, The 80/10/10 Diet, and the online community, 30 Bananas A Day, provide valuable information and support. The high-carb low-fat fruity-raw-vegan or vegan lifestyle is affordable, nutritious, and sustainable! :)

Update: I gave a free talk and easy food-prep demo at the Microsoft Store Theater at the Prudential Center in Boston! All seats were full. Lots of “logistics” involved. lol. I parked the company vehicle from my job right after work and walked to the train station with two gallon coconut oil buckets and a back-pack full of bananas, aloe, romaine, orange, avocado, paper plates, forks, napkins, cups, and an inversion blender (I did not think of using my suitcase on wheels that day). I took the train from Haverhill to Boston North Station, then Green Line subway to Copley and walked about half mile to the Prudential. I got there very shortly before 6:30pm and some people were already waiting. I gave a short talk, did the food demo, cleaned up, caught the train, walked to the vehicle, and drove home. I think people liked my talk and food demo. Rick Williams, Linda Balliro, Paul Something, some college students, some people my age, an older man, and more were there. It was fun for me and glad I pulled it together last minute since the speaker cancelled considering how busy my life is between my “real” job and home/biz. lol. I had stored the romaine in a cooler with freezer packs because I leave my house at 2pm. Typical of me, I forgot to ask someone to take a few photos because I usually just enjoy living in the moment, but will remember next time.

Zucchini Pasta (LFRV)

I made this easy yummy Zucchini Pasta in a few minutes. I peeled the zucchini, cut it in half, and spiralized it. Then I chopped up a tomato and some raisins, put them on top, mixed a bit, and enjoyed. Yum! (low fat raw vegan)

Here’s the recipe:

Zucchini Pasta
2 Zucchini
1 Tomato
1/4 Cup Raisins
pinch Spices (Optional)

Peel (optional) zucchini, cut in half, and spiralize.
Chop up tomato and add on top of zucchini.
Chop up raisins and sprinkle on top.
(optional) Sprinkle on spice to taste: oregano, basil, garlic, pepper, etc.
Mix a bit.
Enjoy!
