I decided to play in my kitchen and my Ⓥ Vegan: BBQ Wings + Gnocchi Marinara were easy and super yummy!
I was given six pounds of frozen plantains and my freezer was full so I cut them up, brushed them with barbecue sauce, baked them in the toaster oven on about 350* for about a half hour and to my surprise they were so yummy with the taste and texture of BBQ Wings! (My son says I probably forgot what meat tastes like after 30+ years and he’s sort of right, but I still think I remember and vegan food tastes much better to me anyway. Lol.)
With Mother’s Day coming up and my grown Son who loves pasta about to visit me, I decided to try to make gnocchi for the first time ever and of course make it vegan because I only cook vegan food and since my son likes hummus I decided to try to me chickpea (garbanzo) gnocchi instead of wheat.
I made the chickpea dough, rolled it like snakes, cut it into pieces, pushed each piece down the back of a fork to make the grooves and shape of gnocchi, boiled it, and added marinara sauce on top. It was super yummy and I can’t wait to make more!
(To be honest I need to work on the texture and handling of the dough a bit as some fell apart a bit, but it was my first try so now I know.)
